That could have worked, I think. At least Darth Vader would still be looked upon as a colossal figure, which, frankly, after the second trilogy as we have it, he really isn't any longer, being more of a laughingstock. "No-o-o-o-o-o-o-o-o!" (Or else, when not a laughingstock, he's the worm who slew a bunch of children, which is fearsome, yes, but in a slimy sort of way, not grandiose at all, merely despicable, not impressive, merely reprehensible, the sort of deed that makes you want to spit on him.)
I would add only this: We get to see the taking of Luke and Leia by the good guys, and how they were placed in new homes, and even a little of them growing up. This would provide the hope that every Star Wars movie should have.
